This came out moist and delicious. You can leave the veggies out if you want, but I always want veggies. lol
Loosely adapted from How Easy is That
1 half turkey breast (4lb)
1 :carrot, rough chop
1 :celery stalk, rough chop
1/2 :onion, chopped
1.5 c :chicken broth
1. ) Sautee onions carrots and celery in some oil until soft.
2. ) Mix olive oil and chopped herbs. Spread all over the turkey breast with your hands, rubbing some under the skin if desired.
3. ) Salt and pepper the breast. (Boy-monster: You said breast!!) Put it in an oven pan (I used this because it’s all I had, but a roasting pan would be best) with the veggies and chicken broth.
4. ) Bake at 325 for about 1 1/2 hours, until the internal temperature is 165.
